Easy Pumpkin Muffins

Super Duper Easy Pumpkin Muffins


Seriously...baking doesn't get any easier than this ladies and gent (the hubs follows my blog)!

You are just two..yes TWO ingredients away from the most moist and tasty Pumpkin Muffins ever :)

I learned of this recipe from my little sister..Thanks Danielle! 
She made them as gifts for people one year and I fell in love with them, and I've been making them ever since..

SOoOoOoO...in the words of the Black Eyed Peas..let's get it started!


You will need a box of Spice Cake Mix and a can of Pumpkin..that's it..

Preheat your oven to 350 Degrees

So mix those too ingredients together..now these are VERY dense muffins..so if you want them a little fluffier, you can add some water..I don't cause I like them dense.


Now spray your mini cupcake pan with cooking spray that has flour in it.
I've used regular cooking spray and it works just fine too.


Now scoop the thick batter into your cupcake pan by the spoonful..
I like to use the "two spoon cookie batter method"..so I can drop the balls of batter into the pan.
Because these are so dense, they will not change shape much..so try and get them as round as possible...not that it REALLY matters cause they will taste the same..but for prettiness factor..

I scooped all my batter into a 24 cup Mini Cupcake Pan..so my muffins came out rather large...you can double the amount of muffins by filling it up just to the rim of the pan..My batter went above the rim, so my muffins came out huge. Does that make sense?
Bake for approximately 16-18 minutes if you put all your batter into your 24 mini pan like I did, less if you put in less batter...just watch them and put a toothpick in them, if it comes out clean their done.


Here are my cooked muffins...see how big they are?  
If I was giving these as a gift, I would've put half the amount of batter into the pan and made 48 muffins.



 I put them in a basket, and when my son walks in the door from a long day at school, he can enjoy a tasty Pumpkin Muffin for snack!
I think i'll put a couple in his lunch tomorrow just to be a super duper nice cool Mom...
My kid is in Middle School..I'm trying to score points here LOL :)

*Update: So I just want to make sure you know that it's just the cake mix and pumpkin..no egg, water, oil, that you would normally add to the cake mix

  2. These are VERY yummy! They disappear very quickly lol :) Plus it's great to keep the two ingredients on hand for those moments when you want to make a yummy treat that's easy, tasty and fast. Perfect thing to bring to a book club, girls night, church, etc...
