Low Carb Peanut Butter Cookies
I know what you're thinking...low carb? Eww! Am I right?
Well guess what..they are YUMMY!
And
Easy to make. Very few ingredients. Even you non-bakers could make these :)
I believe these are even in the Atkin's Diet Plan.
Here's the Recipe :)
Low Carb Peanut Butter Cookies
- 1 Cup of Peanut Butter (Chunky or Creamy)
- 1 Cup of Sugar
- 1 Egg
- 1/2 Tsp Vanilla Extract (optional)
Mix all ingredients together in bowl.
Place rounded spoon fulls onto cookie sheet
Smoosh down with fork to get grid lines
Bake at 350 degrees for 12-14 minutes
Let cool
Makes approx 12 cookies
You can also add Chocolate Chips...Yum!
Ok, honestly I don't make these cause they are low carb...I make them because they are super fast, easy and taste really really good. Plus I always have the ingredients on hand in my cupboard.
Enjoy!
Whoops! My blog url I left you in the last comment has a typo in it. Here is the right url: http://www.the-not-so-desperate-chef-wife.com

ReplyDeleteHave you tried this recipe with sugarfree chocolate chips and a sugar substitute to make it low carb? What would you use for a sugar substitute?
